Wash chicken gizzard and liver thoroughly. Place the gizzard in medium size pan add enough water to cover. When done discard water and keep aside gizzard to cool down. In the meantime slice the liver into bite size, rinse and drain, keep.

- In a clean pan, pour in 4 tablespoon of oil, add in some pieces of diced onion and allow to sizzle
- Now add in the gizzard and saute for 2 minutes
- Then add the liver and continue stirring
- Squeeze few drops of the lemon juice into the pan and then add in the diced veggies (capsicum, green pepper, scotch bonnet, onion and tomato)
- Add the seasonings and stir for about 4-5 minutes
- Serve hot, it can be served with boiled rice, yam or potatoes.
When done discard water and keep aside gizzard to cool down. In the meantime slice the liver into bite size, rinse and drain, keep. Place the flour in a plastic bag, and pour in the gizzards with their seasoning. Shake the bag to thoroughly coat the gizzards with flour. Drain the gizzards on paper towels, and serve hot.
